This dressing only takes a couple of minutes to make, and it is so absolutely delicious on anything green and fruity that it’s the dressing our kids ask for over and over.
- 1/4 cup honey
- 3 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 large shallot or one-quarter of a red onion, minced
- 2 teaspoons Dijon mustard
- 1 teaspoon poppy seeds
- Salt & pepper to taste
- Whisk in a small bowl or shake in a tight-lidded jar until very smooth.
Store in the refrigerator for up to two weeks.
